A. No, they're not basically the same thing. Traditional Mexican food is far more varied than Tex-Mex, and a lot of Tex-Mex dishes were never a part of Mexican food, such as nachos (although Nacho is short for Ignacio, a common name male name in Spanish). Tex-Mex food started in Texas and borrowed a lot of dishes from Northern Mexican "peasant food" which was heavy on beans, rice and corn as these foods were cheap. A big difference in Mexican food and Tex-Mex is seafood dishes. There a lot of Mexican seafood dishes, like Ceviche which is more well-known, and a variety of other fish and shrimp dishes. A. In El Paso, this is the process... You get red chile sauce. This is sold frozen, in a powder to mix with water, or by the pod. By the pod is best, but then you have to prepare the sauce yourself. To do that, you boil the pods in water until soft, then clean out the seeds and stem, and finally blend it, adding small amounts of water, until its a thick liquid. Then you cook your meat, we typically use pork, with the red chile. You would cook this slowly, like in a crock pot, to keep it moist. This should be too wet to eat like that. Then you shred the meat. After that, you take the hojas(corn husks) and soak them to make them soft and pliable.
